Raki (tsikoudia)- The cretan spirit

Raki is a real Cretan product closely related to the Greek way of life, hospitality and entertainment of the Greeks!

Is the drink served in Crete on almost every occasion. Cretan raki is consumed as a sign of friendship and politeness, as a means of social communication. It is served almost naturally after every meal and there is often the opportunity to drink raki!

The process of making Cretan Raki

The process for Cretans is the same as it was centuries ago…

Raki is made in the autumn after the grape harvest, when the vines have been pruned. Raki is obtained from the grape press residue during winemaking, the core, by distillation. It contains an average of 30 to 40 percent alcohol by volume…

Distillation follows an ancient method that has been used for centuries and is now part of the Cretan tradition. The marc, which has been fermented in barrels for more than a month, boils in a special kettle, the Kazani.

The kettle or kazani consists of 4 parts:

• the pot with the marc.

• The lid is big enough to seal as much steam as possible.

• The pipe is long enough to leave space between the fire that heats the pomace and the cold water (see next step). The pipe (Loulas in Greek) directs the steam to the barrel.

•The barrel (or rouba) with cold water inside so that the steam flowing through the tube becomes raki drops.

Ouzo recipe!

The ouzo is prepared as follows:

Roughly chopped fennel and star of anise are soaked in alcohol and then distilled. The distillate obtained must show 40-60 degrees Centigrade alcoholic meter, depending on the quality we want to achieve.

The usual type, which the drinker can arrange as he wants, is the following:

15 liters of alcohol of 40 grams
1 kilogram of fennel grains
150 grams of roughly chopped fennel
150 grams of star of anise

Soak for 24 hours and distillation 40 degrees distillate. Ouzo also prepare some quantities of unequal and fennel essential oils in cold, dissolving in alcohol of 95 degrees, and then adding to the mixture as much water as the mixture receives without becoming cloudy.

The usual formula is:

3 grams of fennel essential oil
8 grams of anise oil
In a 3 kilo copper still, Pour the mixture of essential oils, 250 grams at 95 degrees of alcohol and add as much water as needed to reach the mixture at that point in which a minimum amount of water causes the blur. In the upper blend of essential oils, the drinker can add other essential oils, such as coriander, aniseed, etc., depending on the requirements of his clientele.

Ouzo: the famed drink of Greece!

One of the most traditional alcoholic beverage in Greece and one of the most beloved of Greeks! It can be found in nearly all cities, towns, and villages and mainly it served with “mezedes” (the Greek version of tapas) such as octopus, salad, stuffed grape leaves, calamari, fried zucchini, croquettes and it is only made in Greece!

If you’re a fan of Italian Sambuca or French Pastis you’ll love ouzo!

Ouzo production begins with distillation in copper stills.

Anise is added, sometimes with other flavorings such as star anise or mastic. Like any other anise-flavored spirit, if you add a little water to ouzo, it’ll get milky. So place one or two ice cubes in a small glass. Pour a small amount of ouzo over the ice and enjoy!

You can also mix ouzo in cocktails! Some good flavors to mix ouzo with are citrus juices, cranberry juice, banana, and mint!

Ingredients:

  • 2 ounces ouzo
  • 4 fresh mint leaves
  • Juice of 1 lemon
  • Soda water
  • Orange slices, for garnish

Directions:

Place the ouzo, mint and lemon juice in a cocktail shaker with ice and shake vigorously. Strain over ice and top with soda water. Garnish with an orange slice and serve.
